Step-by-Step Guide to Making Maui Sweet & Sour Beef

Ingredients

  • 1 1/2 lbs boneless beef sirloin, cut into 1 1/2″ pieces
  • 1/3 cup brown sugar, packed
  • 1/3 cup cider vinegar
  • 1 small can pineapple chunks, juice reserved
  • 3 tablespoons soy sauce
  • 1 clove garlic, minced
  • 3 tablespoons oil
  • 1/2 teaspoon dried red pepper flakes
  • 3 cups baby carrots, cut lengthwise
  • 1 large green pepper, chopped
  • 1 large onion, cut into quarters and separated
  • 3 tablespoons cornstarch
  • 3 tablespoons cold water

Equipment

  • Slow cooker
  • Frypan
  • Small mixing bowl
  • Whisk

Instructions

1. Prepare the Sauce

  • In a small bowl, mix together the brown sugar, cider vinegar, reserved pineapple juice, soy sauce, and minced garlic until the sugar is fully dissolved. This creates the base of your sweet and sour sauce.

2. Brown the Beef

  • Season the beef pieces with salt and pepper to taste. Heat oil in a frypan over medium-high heat, add the beef and red pepper flakes, and brown the beef on all sides. This step enhances the flavor and texture of the beef.

3. Layer in Slow Cooker

  • Transfer the browned beef to the slow cooker. Add the baby carrots and onion pieces on top. Pour the prepared sauce over the beef and vegetables, ensuring everything is well coated.

4. Slow Cook to Perfection

  • Cover and cook on low for 7-9 hours or on high for 3-4 hours. This slow cooking process allows the flavors to meld beautifully and the beef to become wonderfully tender.

5. Thicken the Sauce

  • Switch the slow cooker to high (if it isn’t already). Mix cornstarch and cold water in a small bowl until smooth. Stir this mixture into the slow cooker, then add the pineapple chunks and green pepper. Stir well, cover, and cook for an additional 30 minutes, or until the sauce thickens.

6. Serve and Savor

  • Serve your Maui Sweet & Sour Beef over a bed of fluffy rice, allowing the rich sauce to soak in and complement the rice perfectly.

Customization Tips and Serving Suggestions

  • Spice Level: Adjust the amount of red pepper flakes to suit your taste for heat.
  • Vegetable Variations: Feel free to add or substitute other vegetables like red bell peppers or snap peas for added color and crunch.
  • Serving Ideas: For an authentic Hawaiian touch, serve with a side of macaroni salad or a fresh tropical fruit salad.
