Gathering Your Ingredients
First things first, let’s get our ingredients ready. You’ll need:
- 2 lbs of beef stew meat, cut into bite-sized pieces with fat trimmed off
- Tomato paste, water, and a large onion for that base of flavor
- White vinegar, brown sugar, and reduced salt soy sauce for that tangy sweetness
- A sprinkle of ginger, dry mustard, reduced salt beef bouillon powder, and fresh pepper to bring it all together
Step by Step: From Prep to Freezer
- Mixing Magic: In a large bowl, whisk together the tomato paste, water, chopped onion, vinegar, brown sugar, soy sauce, ginger, mustard, bouillon powder, and pepper. This is your flavor powerhouse.
- Beef Bath: Toss in your beef pieces until they’re well-coated in the marinade. This step ensures every bite is infused with BBQ goodness.
- Freezer-Friendly: Transfer the beef mixture into a freezer-safe container. Seal it with love, label it for later, and pop it in the freezer. Congratulations, you’ve just meal prepped like a pro!
Serving Day Delight
- Thaw and Bake: The day you’re ready to serve, thaw the container in the refrigerator overnight. Preheat your oven to 325°F (163°C), transfer the beef into a baking dish, and cover it up.
- Slow Cook to Perfection: Let the oven work its magic for about 2 1/2 to 3 hours. The result? Incredibly tender, flavorsome beef that falls apart at the touch of a fork.
- Serving Suggestions: This dish pairs wonderfully with rice, soaking up the rich BBQ sauce for a meal that’s satisfying and complete.
Additional Tips for Success
- Rice Variety: Feel free to get creative with your side dishes. Whether it’s white, brown, or even cauliflower rice for an extra health kick, this recipe is versatile.
