Ingredients
- 1 lb tomatoes skinned and sliced
- 1 small onion sliced
- 1 garlic clove crushed
- 2 sliced white bread
- 4 tbsp wine vinegar
- 5 tbsp olive oil
- 1 1/4 cups chicken stock
- 1/4 small green pepper diced
- 1-2 tbsp lemon juice
- salt and pepper
On serving day
- 1/4 cucumber diced
- fried croutons
Instructions
- Put the tomatoes, onion, garlic, bread, vinegar, oil and stock in a blender. Blend until well combined - you may need to do a few batches depending on the size of your blender. Put into bowl, adding green pepper, lemon juice and salt and pepper.
- Place in freezer container and freeze.
On serving day
- To serve, thaw overnight in refrigerator.
- Serve with diced cucumbers and croutons.
