Step-by-Step Guide to Making Freezer Salsa
Ingredients
- 12 large tomatoes (approximately 4 lbs), ripe and juicy
- 1/4 cup olive oil
- 3 tbsp finely chopped hot peppers (adjust according to heat preference)
- 6 cloves garlic, minced or chopped
- 6 green onions, thinly sliced
- 3 tbsp fresh lime or lemon juice
- 1/4 tsp each salt and pepper
Equipment
- Large pot for blanching
- Frypan
- Colander
- Large bowl
- Freezer-safe containers or bags
Instructions
1. Prep the Tomatoes
- Begin by coring the tops of the tomatoes and cutting an “X” on the bottom of each. Blanch the tomatoes by dropping them into boiling water for one minute. Drain, then peel off the skins and remove seeds and excess juice. Chop the tomatoes into large, chunky pieces and place them in a colander. Stir rapidly to force out remaining juice, then blot with a paper towel and transfer to a large bowl.
2. Sauté the Aromatics
- Heat olive oil over low heat in a frypan. Add the chopped hot peppers and garlic, cover, and simmer for 10-12 minutes, stirring occasionally, until the garlic is softened. Add the green onions and stir well.
3. Combine and Season
- Add the sautéed pepper and onion mixture to the chopped tomatoes. Stir in the lime or lemon juice, salt, and pepper, combining everything thoroughly.
4. Cool and Freeze
- Allow the salsa to cool to room temperature. Then, portion the salsa into serving-sized freezer-safe containers or bags. Seal tightly and freeze.
Freezing and Serving Tips
- Cooling Before Freezing: Ensure the salsa cools completely to maintain freshness and prevent ice crystals.
- Thawing: Thaw in the refrigerator overnight or at room temperature for a few hours before serving.
- Serving: If there’s excess juice upon thawing, simply drain it off. Serve your salsa chilled for a refreshing taste.
Customization Tips and Serving Suggestions
- Spice It Up: Experiment with different types of hot peppers to find your perfect level of heat.
- Add-Ins: Consider incorporating cilantro, corn, or black beans for additional flavors and textures.
- Serving Ideas: Beyond chips, use your freezer salsa as a topping for grilled chicken, fish, or as a vibrant addition to salads and tacos.
