Ever had just a glass or so leftover and a bottle of wine that you don’t want to pour down the drain but you know would be some time before you would be cooking and need that little bit of wine? Contrary to popular belief that alcohol does not freeze, you can easily freeze your leftover wine in small portions so you can use it in soups and sauces later on.
Most recipes call for about a tablespoon or so of wine. So using an ice cube tray, measure it tablespoon into each cube space, then freeze. Once it is frozen, you can remove the wine cubes and place into a Ziploc bag. Then when you need some wine in a recipe, simply grab enough ice cubes as is required, rather than opening a brand-new bottle.
Just be sure to label your wine cubes with what wine type it is, because some recipes may call for specific types of wine, or you can even tape the bottle label to the outside of the bag.
