Step-by-Step Guide to Making Tex Mex Chicken Soup

Ingredients

  • 2 (14-oz) cans chicken broth
  • 1 (15-oz) can Great Northern Beans, rinsed & drained
  • 1 (4-oz) can green chilies, chopped
  • 1 red onion, chopped
  • 1/2 tsp minced garlic
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • 3 cups cooked chicken, chopped
  • 1 cup frozen corn

Equipment

  • Large soup pot
  • Freezer-safe containers

Instructions

1. Prepare the Base

  • Lightly spray a large soup pot with non-stick cooking spray. Sauté the garlic and onion over medium heat until the onion is translucent. This step builds a flavorful foundation for your soup.

2. Add the Flavor

  • Stir in the Great Northern Beans, green chilies, oregano, cumin, and chicken broth. Bring the mixture to a boil, then reduce the heat, cover, and simmer for 15 minutes. These ingredients infuse the soup with that signature Tex Mex flavor.

3. Mix in the Chicken and Corn

  • Add the chopped cooked chicken and frozen corn to the pot. Continue to simmer for another 15 minutes, or until the soup is heated throughout. This adds texture and ensures every bite is packed with flavor.

4. Cool and Freeze

  • Allow the soup to cool completely before transferring it to freezer-safe containers. Consider portioning the soup into individual servings for easy thawing and reheating.

Freezing and Reheating Tips

  • Cooling: Ensure the soup is at room temperature before freezing to maintain the best quality.
  • Freezing: Label the containers with the date and contents for easy identification.
  • Reheating: Thaw overnight in the fridge or reheat directly from frozen, adjusting the cooking time accordingly.

Customization Tips and Serving Suggestions

  • Add Heat: If you love spice, add extra green chilies or a dash of hot sauce.
  • Garnish: Top with fresh cilantro, diced avocado, shredded cheese, or a dollop of sour cream for added flavor and texture.
  • Side Dishes: Serve with tortilla chips, a slice of lime, or warm cornbread for a complete meal.
