Ingredients: The Building Blocks of Comfort

  • Tender Chicken: We start with 2 lbs of boneless, skinless chicken breasts, cubed for easy cooking and eating.
  • Vegetable Medley: Chopped onion, thinly sliced celery, and sliced carrots add depth and nutrition to the dish.
  • Flavorful Base: All-purpose flour and prepared chicken broth create a rich, savory stew for the chicken and vegetables.
  • Herbal Touch: Dried thyme leaves (or ground thyme) infuse the dish with a warm, aromatic flavor.
  • Dumplings: A simple dough of all-purpose flour, baking powder, and buttermilk forms the fluffy, delightful dumplings that make this dish truly special.

Cooking Up Comfort: Step-by-Step

  1. Brown and Sauté: Begin by sautéing chicken and onion in a large soup pot until the chicken is nicely browned. Add celery and continue to sauté.
  2. Create the Stew: Sprinkle in flour, then gradually add chicken broth, carrots, and thyme. Stir well, bring to a boil, then simmer until the chicken is tender.
  3. Dumpling Magic: While the stew simmers, prepare the dumplings by combining flour, baking powder, and buttermilk. Feel free to season with salt and pepper to taste.
  4. Dumpling Drop: Drop tablespoonfuls of dumpling dough into the simmering stew. Cover and cook until the dumplings are fluffy and cooked through.

Freezing for Future Feasts

  • Cool and Freeze: Allow the dish to cool, then portion it into freezer-safe containers. Now you’ve got a homemade, comforting meal ready to go!

Serving Day Delights

  • Reheat and Enjoy: When you’re ready to enjoy, defrost and gently reheat the chicken with dumplings on the stove. The aroma and taste will transport you to a world of comfort.  Experiment with adding different fresh herbs on cooking day to give a burst of freshness.  Your options are endless!
