Gazpacho Freezer Recipe

Ingredients
  

  • 1 lb tomatoes skinned and sliced
  • 1 small onion sliced
  • 1 garlic clove crushed
  • 2 sliced white bread
  • 4 tbsp wine vinegar
  • 5 tbsp olive oil
  • 1 1/4 cups chicken stock
  • 1/4 small green pepper diced
  • 1-2 tbsp lemon juice
  • salt and pepper

On serving day

  • 1/4 cucumber diced
  • fried croutons

Instructions
 

  • Put the tomatoes, onion, garlic, bread, vinegar, oil and stock in a blender. Blend until well combined - you may need to do a few batches depending on the size of your blender. Put into bowl, adding green pepper, lemon juice and salt and pepper.
  • Place in freezer container and freeze.

On serving day

  • To serve, thaw overnight in refrigerator.
  • Serve with diced cucumbers and croutons.
