Pork Satay Freezer Recipe


  • 2 lb pork tenderloin cut in 1" cubes
  • 1/4 cup peanut butter
  • 1 tsp coriander
  • 1 large onion finely diced
  • 1 tsp salt
  • 1 tbsp brown sugar
  • 3 tbsp lemon juice
  • 1 tbsp soy sauce
  • 1 tsp Tabasco sauce
  • 1/8 tsp ginger


  • Mix ingredients together for marinade and marinade pork cubes overnight in refrigerator. Freeze.
  • On cooking day:

On cooking day

  • Defrost pork satay, drain marinade (but save it!).
  • Place meat on skewers in between pieces of onion (and any other vegetables you prefer). Grill on a preheated grill on high for five minutes. Flip skewers, baste with remaining marinade and grill on high for another 5 minutes. Reduce heat on barbecue, and continue cooking until pork is cooked through - do not reuse marinade on cooked meat for food safety reasons.
