Most people don’t realize that you can cook potatoes in the slow cooker. This recipe features new baby potatoes, which I feel are the best potatoes of the season!
New Baby Potatoes with Dill for Slow Cooker
Cooking a side dish in the slow cooker is a great way to add a dish to a larger meal when you are busy using the oven and stove top for other dishes.
Ingredients
- 3 lbs new baby tomatoes
- 2 tbsp margarine
- 2 tbsp fresh dill chopped
- 2 cups water
- Salt & pepper to taste
Instructions
- Wash tomatoes to remove dirt and add to slow cooker. Add salt and pepper (optional) to taste. Add 2 cups water and butter.
- Cook on high for 2 hours.
- If you can lift the slow cooker insert safely, drain the potatoes, otherwise use a slotted spoon to remove the potatoes from the crock pot. Add dill and a small amount of butter if desired, stir well to combine and serve.
