1 1/2 lbs. beef
stew meat
3 large potatoes
3 large stalks celery
3 to 4 carrots, pared and sliced
2 1/2 cans tomatoes
1 slice bread, cubed
3 tbsp. Minute tapioca
Salt and pepper to taste
Bay leaf (optional)
1 med. onion
Cut vegetables
into chunks. Add meat, vegetables, bread and tapioca to crock
pot, stirring to combine. Pour tomatoes on top of vegetables,
bu do not stir. Turn crock pot on high for first hour, then
on low for 6-7 hours. Serve with corn bread.
