This coconut chicken is made with coconut milk, not coconut flakes, so you get a much smoother tasting chicken and sauce.
I love to serve this one with grilled pineapple on the side, or you can even add some pineapple into the crock pot if you prefer.
Coconut Chicken Crock Pot Recipe
- slow cooker
- ½ cup coconut milk
- ½ cup water
- 8 chicken thighs skin removed
- ½ cup brown sugar packed
- 2 tbsp soy sauce
- 1/8 tsp ground cloves
- 2 garlic cloves minced
- In a small bowl combine coconut milk and water, then pour into slow cooker. Then add chicken thighs. Combine remaining ingredients in small bowl (can use the same bowl), stirring well, then pour over chicken.
- Cook on low for 6-8 hours or until chicken is cooked through.
- Serve with rice.
