Cinnamon Bread Pudding for Slow Cooker
If you love cinnamon rolls but not the loaded calories, this is a great compromise. You can also use whole wheat raisin bread if it is available.
- slow cooker
- 4 eggs
- 3 1/2 cups milk
- 1 cup packed brown sugar
- 1 tbsp brown sugar additional
- 1 tsp vanilla extract
- 1 tsp cinnamon divided
- 1 loaf cinnamon raisin bread torn into 1" pieces
- Spray the inside of the slow cooker with non-stick cooking spray. Put bread into slow cooker. In a small bowl, combine eggs, 1 cup brown sugar, vanilla, 1/2 tsp cinnamon, mixing well. Pour over bread in slow cooker, stirring so milk mixture soaks into the bread. Sprinkle remaining 1 tbsp brown sugar and 1 tsp cinnamon. Cover and cook on low for 4-5 hours or high for 2-3 hours. Serve with maple syrup if desired.
