Microwave Acorn Squash Recipe
2 acorn squash (about 1 lb each)
2 tbsp butter
4 tbsp brown sugar
Cut both squash in half lengthwise. Use a scoop to scoop out the seeds. Place in microwave dish. In each half of the squash place 1/2 tbsp butter and 1 tbsp brown sugar. Cover with saran wrap and microwave on high 6-8 minutes or until tender. Let stand in microwave for 5 minutes.
Season with salt/pepper/cinnamon to taste.
