Gazpacho
Freezer Recipe
1 lb tomatoes,
skinned and sliced
1 small onion, sliced
1 garlic clove, crushed
2 sliced white bread
4 tbsp wine vinegar
5 tbsp olive oil
1 1/4 cups chicken stock
1/4 small green pepper, diced
1-2 tbsp lemon juice
salt and pepper
1/4 cucumber, diced
fried croutons
Put the tomatoes,
onion, garlic, bread, vinegar, oil and stock in a blender.
Blend until well combined - you may need to do a few batches
depending on the size of your blender. Put into bowl, adding
green pepper, lemon juice and salt and pepper.
Place in freezer
container and freeze.
To serve, thaw
overnight in refrigerator. Serve with diced cucumbers and
croutons.
