One common complaint by OAMC cookers is that sometimes meals can get overdone, particularly when you make multiple batches of a dish, with one to serve for that evening’s meal while leaving another one, two or three for a future meal from the freezer. And it can be easy to overcook, since you are cooking it, then it cooks again while reheating the dish for dinner after defrosting.
There is a trick you can do to avoid overcooking, and it is pretty easy. Simply set aside the portion for the freezer 3-10 minutes before the dish is done, then finish cooking the one you are making for that evening’s meal. This means the ones for the freezer are slightly underdone, and when you reheat it after being in the freezer, you don’t run the risk of overcooking it.
