When packages of deli meat goes on sale, it can be tempting to stock up on your favorite kinds of meat for lunches. But do the packages of deli meat really freeze well enough that even the pickiest eater will like the sandwiches? Fortunately, the answer is yes, if you do it right.
First, pick packages of deli meat that are vacuum sealed (ie. most packaged sandwich meats are). If you are getting it direct from the deli, and it is in a plastic bag, you will need to either place it in a freezer bag or vacuum seal it first. Be sure to date it, so you know when you bought it.
When it is time to use it, defrost it in the fridge a day or two before hand. The freezing process will cause some liquid to separate from the deli meat, so when you open the package, you will need to drain it off. Then use your lunch meat as you would if you had just brought it home from the store!
