Yes, you can make extra bouquet garni with your leftover herbs to save them for later uses. And they will last for a year in the freezer.
To make bouquet garni for the freezer, take a sprig of thyme, a sprig of parsley and a bay leaf and tie them together with kitchen twine or thread. Continue making them until you run or of fresh herbs.
Place the tied bouquet garni in either a plastic freezer bag or a sealed freezer container, and level it with the date. They will keep fresh in the freezer for up to a year.
To use them from frozen, you simple need to add them to the soup, casserole or the dish you are making, as they do not need to be thawed first
