How to store fresh ginger

Fresh ginger is so much better than ground ginger in jars, but it can be a tricky one to store after being used, without it going either moldy or completely dried out. But there is an easy way to store ginger for weeks without either of these problems. Next time you use a knob from the ginger root, simply pop it into the refrigerator... unwrapped. Yes, leaving it unwrapped will not allow it to get mold, and the cooler temperature in the fridge will prevent it from drying out before its next use.
