Nothing beats the taste and flavor of homemade chicken or beef stock. Unfortunately, it tends to be much higher in fat than the store-bought fat-free brands, meaning you could be adding extra calories to your diet when you really don’t want to. But there is an easy way to make your homemade stocks much closer to fat-free.
Once you have finished cooking your chicken or beef broth, allow it to cool, then place in the refrigerator. Once it has chilled, use a spoon to remove the fat layer from the top of the broth, which will rise to the top as it is cooled.
Once the fat is removed, you can use the broth in a recipe or freeze it in portions for later use.
