You can make your own vanilla instead of buying it at the store (or the artificial vanilla ) in the stores. And surprisingly, vanilla is made with vodka!
For every two cups of vanilla, you will need 3 vanilla beans and 2 cups of vodka.
First, split the vanilla beans in half and scrape the seeds into a blender. Then drop the vanilla beans into the blender with 1 cup of vodka. Blend until beans are chopped fairly small. Then add the remaining 1 cup of vodka and blend on high for about 8 minutes. Pour into bottle and store in a cool dark cupboard.
You can strain the beans out, but normally, as long as you don’t shake the vanilla bottle before using, they will stay on the bottom and continue to steep in the vodka. If you prefer to strain, use cheesecloth to strain the beans out when you place it in the bottle or as you use it.
Shaking the bottle periodically will help distribute the color to the vanilla (yes, it will go quite dark!)
You can use the most inexpensive vodka, you don’t need to use Grey Goose!
For best results, allow the vanilla to sit for a year before using, but you can begin to use it after about a month, although the vanilla won’t be as strong immediately.
