Dredging beef is actually much simpler than it sounds! It simply refers to coating beef (or other meat) with a thin coating of flour or seasoned flour mixture, usually done by “dredging” the meat along a plate or bowl that contains the flour. Ot is often used to seal in juices or flavors or as a helper to help thicken stews or soups made with the dredged beef.
It is also the same kind of idea as Shake N Bake. Unless instructions refer you to do it in a specific way (such as dredging one side only) you can pour the flour mixture into a food-safe plastic bag and shake the beef in the bag.
