If you end up being given more shortbread than you can eat a short amount of time, you can definitely freeze shortbread to save it for later.
Freshly baked shortbread will keep for a week or two if it’s kept in an airtight tin or in a ziplock bag. But if you want to keep your shortbread for longer than that, freezing it is my ideal solution, especially since you don’t necessarily need to take all the shortbread out at once to thaw, you can easily just grab one or two pieces at a time to have as a snack.
The only downside to freezing shortbread is that you’ll need to let it naturally, can’t do it by putting it in the microwave. So you do need to keep that into account, but you wouldn’t be the first person to eat shortbread Frozen straight out of the freezer.
To freeze shortbread, you want to make sure it’s completely cool, in case you have just baked it. Then you want to wrap it carefully in foil taking care to reduce any air pockets as much as possible. Then you want to put the oil into a Ziploc bag to protect it in your freezer.
You can also make larger batches of shortbread, and save extra batches in the freezer, for when you might need a quick gift for someone or you have company coming.
