Trail Mix Cookies in a Jar

These cookies make a great gift for the hikers in your family, who will get a kick out of the trail mix theme.

Wide-mouth jar (quart sized)
1/2 cup packed brown sugar
1/2 cup sugar
3/4 cup wheat germ
1/3 cup quick oats
1 cup raisins
1/3 cup packed flaked coconut
1/2 cup chopped pecans
3/4 cup flour
1 tsp. baking powder

Mix together flour and baking powder. Then layer brown sugar, sugar, wheat germ, quick oats, raisins, coconut, chopped pecans, then flour mixture. As you add each layer, pack it down firmly.

For jar gift tag:
Preheat oven to 350º. Empty the Trail Mix cookie mix in large mixing bowl; stir mixture to combine ingredients. Add 1/2 cup softened butter or margarine, 2 slightly beaten eggs and 1 tsp. of vanilla; mix until completely blended together.

Roll dough into small 1-inch balls. Place 2 inches apart on a lightly greased cookie sheet. Bake at 350º for 12 to 14 minutes or until edges are lightly browned. Cool 5 minutes on baking sheet, then place cookies on wire racks to until completely cool. Makes: 2-1/2 dozen Trail Mix Cookies.
