A different spin
on the usual chocolate chip raisin cookies!
3/4 cup white sugar
1/2 cup packed brown sugar
1 cup chocolate covered raisins (such as Glosette raisins)
1/2 cup milk chocolate chips
1 3/4 cups flour
1 tsp baking powder
1/2 tsp baking soda
Combine flour,
baking soda and baking powder. Then layer each item in the
jar in the order listed above (starting with white sugar and
finishing with the flour mixture). Press each layer down firmly
before adding the next, or you won't have enough room for
all of the flour! Seal with a lid.
Directions:
1 egg
1/2 cup room temperature butter/margarine
1 tsp vanilla
Preheat oven to
375F. Empty chocolate covered raisin cookie mix into a large
mixing bowl, stirring to combine all ingredients. Add 1/2
cup room-temperature butter or margarine (how
to soften butter in the microwave without melting it).
Add egg and vanilla, mixing well. Knead with hands to ensure
it is mixed well then roll into one-inch balls. Line cookie
sheet with parchment paper and place balls 2 inches apart
to allow for spreading. Bake in preheated oven for 13-15 minutes
or until golden brown. Allow cookies to cool for 5 minutes
on cookie sheet before removing to cooling rack. Serve! Yield:
About 30 cookies
