- 1 lb black-eyed peas soaked overnight the night before cooking
- 1/2 lb ham hock smoked preferred
- 1 medium onion diced
- Drain the black-eyed peas and place in a slow cooker. Add the ham hock and toss onions over top. Add enough cold water to the slow cooker so that the peas are just slightly covered.
- Cook on low for 5-6 hours or until peas are completely tender and water is nearly gone from the slow cooker.
